Apologies about last week. We're back on track now and planning to bake a whole whack of bread this week for fresh sales and also to stock the freezer. We appreciate your understanding.
#2 - WE'VE GOT EGGS EVERYWHERE!
We're pretty excited to be partnering with some of our other local farmers and food folks to get our eggs out to the people. Our focus is on getting good eggs into households. This week we stocked fridges at Salix and Sedge in Salmo as well as The Rooted Table Collective in Rossland. We are also continuing to provide eggs to Confluence Farms who are delivering them alongside all their other goodies to folks all over the place. In addition we have still been able to donate a good number of eggs to The Nelson Community Food Centre in town. Super fun. Dream come true.
If you're buying a flat, please bring your own cartons and leave us the flat or just try to bring back the flat when you're done!
#3 - A NOTE ABOUT EGG FRESHNESS
We are always carefully monitoring our egg fridges. We remove eggs from sale once they reach 2 weeks old just so we can continue to circulate stock, not because their quality is compromised. Any eggs picked up from us will last in the fridge for 3+ weeks after they are purchased. In our house, we eat eggs well beyond this.
If you're wondering if an egg is fresh, a good test is to put it in a cup of water. If it sinks, it's good to go, if it floats... its too old. The reason for this is because over time the air sack in the egg expands as the egg takes on air through its porous shell.. once the sack is big enough, the egg will float, indicating its been too long. Clever eh?
With this in mind, if you could please purchase eggs with the oldest date, this will help us with keeping things moving through. Now that we have taken on some other outlets for our eggs, we will do what we can to prioritize getting the freshest eggs we can into the stand for you. If you're planning to be away for awhile or know you'll be taking 3+ weeks to work through your dozen, we're happy for you go dig in and find some fresher eggs.
#4 - BAGELS WILL RETURN NEXT WEEK
I'll do a big bagel bake next week. Stay tuned. I'll do all the usual suspects.. seedy, cinnamon raisin, everything and cheese.
